Vegan Tomato Casserole

Ingredients

  • 3.7 pounds penne brown rice pasta
  • .625 pound fresh basil
  • .0078 pound garlic in oil
  • .3125 pound toasted shelled pine nuts
  • .3125 pound olive oil 25/75 blend
  • 2 pounds tomato puree

Directions

1. Cook the pasta to al dente, drain and cool. Hold for later use.

To make Pesto:
2. Place the basil, tomatoes, garlic, salt and nuts into the robot coupe and puree. 3. Slowly add the oil and blend until the pesto has reached the desired texture.
To make Casserole:
4. Reheat pasta by placing in a pasta cooker or steamer for approximately 1 1/2 minutes to 3 minutes or until the pasta is heated
through.
5. Toss pasta with 1 pound of the tomato mixture. Use just enough sauce to coat the pasta. 6. Place the appropriate serving vessel and serve immediately.
