Tofu Provencal

Ingredients

  • .75 cups Chablis
  • 0.25 pound garlic in oil
  • 1.5 pounds onion
  • 3 pounds drained diced tomatoes in puree
  • 0.25 pound basil
  • 0.25 pound olive oil 25/75 blend
  • 5 pounds cubed extra firm organic tofu
  • 0.0156 pound kosher salt
  • 0.0156 pound ground white pepper

Directions

1. Prepare the ingredients according to the recipe instructions.

2. In a large sauté pan or on a flat top at 350 degrees, add the oil garlic, and onion and sauté until the garlic and onion and translucent and very fragrant. Add the tofu and continue to heat until the tofu is heated through.

3. Add the wine and reduce by 1/2 then add the tomatoes and cook the dish until the internal temperature of 145 degrees has been reached for at least 15 seconds. Season accordingly with salt and white pepper.

4. Place in 2 inch 1/2 pan and serve immediately
