Ingredients
- 12 cups Total cereal
- 2 cups sugar
- 10 cups whole wheat flour
- 3 Tablespoons and 1 teaspoon baking soda
- 2 Tablespoons dried ground ginger
- 2 Tablespoon cinnamon
- 2 cups raisins
- 2 pounds canned pumpkin
- 4 teaspoons vanilla
- 2 quarts skim buttermilk
- 1 1/2 cup canola oil
- 4 cups of Craisins (dried sweetened cranberries)
- 6 egg beaters
Directions
Preheat oven to 400 degrees.
In a large bowl mix together cereal, salt, sugar, flour, baking soda, ginger and cinnamon. Stir in Craisins.
In a separate bowl, combine eggs, pumpkin, vanilla, buttermilk and oil. Stir until blended.
Mix wet ingredients with dry until batter just holds together. Do not over mix.
Bake in cup lined muffin pan for 17 minutes.
