- 1 Pound Uncooked Farfalle Pasta
- 6 Pounds Boneless Beef Sirloin
- 4 Pounds Fresh Asparagus
- 4 Cups Sliced Medium Onions
- 6 Cups Beef Broth
- 4 Cups Tomato Puree
- 1/4 Cup Dried Basil
- 3/4 Cup Chopped Sun Dried Tomatoes
- 1 Teaspoon Black Pepper
- 1/4 Cup Grated Parmesan Cheese
Directions
- Cook and drain pasta.
- Cut beef into 2” strips 1/8” thick.
- Heat large skillet, and add asparagus, onions and 1 cup of broth. Cook 5 to 7 minutes until liquid has evaporated.
- Remove vegetables from skillet.
- Add beef to skillet. Cook about 2 minutes until beef is browned.
- Stir in asparagus mixture, remaining broth, pasta and remaining ingredients except for the cheese.
- Cook about 2 minutes until hot.
- Sprinkle with cheese.
