- 12 Pounds Thinly Sliced Top Round
- 1 1/2 Cups Flour
- 2 Teaspoons Salt
- 1 Teaspoon Pepper
- 1 1/2 Cups Oil
- 3 Quarts Beef Broth
- 2 Quarts Dry Vermouth
- 1 Cup Tomato Paste
- 1/2 Cup Grated Lemon Peel
- 3 Pounds Mushrooms, Sliced
- 4 Pounds 8 Ounces Pearl Onions
- 48 Lemon Slices
- 48 Cherry Tomatoes
- 6 Ounces Green Onions, Sliced
- 3 Ounces Parsley, Chopped
Directions
- Combine flour, salt, and pepper. For each serving, dip 4 ounces beef in seasoned flour to coat. Shake off excess. Sauté beef in oil to brown on both sides. Remove from heat.
- Deglaze skillet with 1/4 cup beef broth and 3 teaspoon. Vermouth Stir in 1 teaspoon. Tomato paste, 1/2 teaspoon Lemon peel. Add 1 ounce mushrooms, cook just to heat through. Add 1 1/2 ounces Pearl onions.
Arrange beef slices in pan. Spoon sauce over beef. Garnish with 2 lemon slices and cherry tomato. Sprinkle with onions and parsley.
