Sesame Farfalle with Roasted Tofu

Ingredients

  • SALAD:
  • 2 quarts halved shiitake mushroom caps
  • 1/4 cup low-sodium soy sauce
  • 4 teaspoons minced peeled fresh ginger
  • 4 teaspoons sesame oil
  • 2 teaspoons Chile paste with garlic
  • 3 1/2 pounds firm tofu, drained and cut into 1/2 inch cubes
  • 2 pounds uncooked farfalle pasta
  • 3 cups 1-inch slices scallion DRESSING:
  • 1/2 cup chopped fresh cilantro
  • 3/4 cup fresh lemon juice
  • 3/4 cup low-sodium soy sauce
  • 1/2 cup unseasoned rice vinegar
  • 2 Tablespoons sesame oil
  • 2 Tablespoons canola oil
  • 1 teaspoon sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/3 cup minced garlic

Directions

  1. To prepare dressing, combine the cilantro, lemon juice, soy sauce, rice vinegar, sesame oil, canola oil, sugar, salt, pepper and garlic. Drizzle dressing over salad; toss well to coat. Cover and chill at least 1 hour.
  2. Preheat oven to 425. To prepare salad, in large bowl, gently toss together shiitakes, soy, ginger, sesame oil, Chile past and tofu. Divide mixtures between several 2” hotel pans and roast at 425 degrees for 40 minutes or until mushrooms are tender and tofu is golden brown.
  3. Cook pasta in boiling UNSALTED water until al dente; drain and rinse under cold water. Drain again after rinsing and do not oil pasta. Combine pasta, tofu mixture, and green onions in a large bowl.
