Marinated Vegetable Salad

Ingredients

  • 25 ounces small fresh cauliflower flowerets
  • 10 1/2 ounces diagonally sliced carrot
  • 12 1/2 ounces diagonally sliced celery (blanched in boiling water and shocked in ice water)
  • 8 ounces sliced red bell pepper
  • 2 ounces sliced pitted ripe olives
  • 29 ounces quartered marinated artichoke hearts, drained
  • 6 Tablespoons white wine vinegar
  • 4 teaspoons olive oil
  • 2 teaspoons dried Italian seasoning
  • 1/4 teaspoon dried Chile flakes
  • 6 Tablespoons orange juice

Directions

  1. In perforated hotel pans, either in a commercial steamer or over boiling water, separately steam the cauliflower and carrots, about 3 minutes or until crisp-tender. Remove from steamer and shock in ice water. Drain.
  2. Combine the cauliflower and carrots with the celery, peppers, olives and artichoke hearts in a large bowl and toss gently to combine. Set aside.
  3. In a small bowl, combine, vinegar, olive oil, dried Italian seasoning, crushed red pepper and orange juice and whisk to combine.
  4. Pour dressing over vegetables and toss gently to coat. Cover and chill.
