Ingredients
- CHICKEN MARINADE
- 2 1/2 cups low fat plain yogurt
- 4 Tablespoons olive oil
- 2 1/2 Tablespoons fresh lemon juice, divided
- 1 teaspoon kosher salt
- 3 Tablespoons chili powder or Spanish smoked paprika (pimento)
- 1 3/4 teaspoons ground cumin
- 1 3/4 teaspoons ground coriander
- 1 3/4 teaspoon black pepper
- 3/4 teaspoon cinnamon
- 6 pounds boneless, skinless chicken breasts (24-4oz breast halves)
- YOGURT SAUCE
- 1 1/2 cups low fat, plain yogurt
- 5 1/4 teaspoons fresh lemon juice
- 1 1/2 teaspoons extra virgin olive oil
- 1 teaspoon kosher salt
- 1 1/4 cups fresh mint leaves, rough chopped
- 2 1/2 Tablespoons minced shallot
Directions
- In a large bowl, whisk together marinade: yogurt, oil, lemon juice, salt, chili powder, cumin, coriander, black pepper and cinnamon. Add chicken breasts to the bowl and coat the chicken evenly with the marinade. Marinate for 1/2 hour.
- While chicken is marinating, prepare the grill for cooking. While grill is heating, whisk together sauce: yogurt, lemon juice, oil, salt, minced mint and shallots. Chill.
- Remove chicken from marinade and discard marinade. Spray grill with cooking spray and grill chicken on both sides until cooked through. Serve with 1 tablespoon yogurt mint sauce.
