Grilled Chicken Breasts in Spiced Yogurt

Ingredients

  • CHICKEN MARINADE
  • 2 1/2 cups low fat plain yogurt
  • 4 Tablespoons olive oil
  • 2 1/2 Tablespoons fresh lemon juice, divided
  • 1 teaspoon kosher salt
  • 3 Tablespoons chili powder or Spanish smoked paprika (pimento)
  • 1 3/4 teaspoons ground cumin
  • 1 3/4 teaspoons ground coriander
  • 1 3/4 teaspoon black pepper
  • 3/4 teaspoon cinnamon
  • 6 pounds boneless, skinless chicken breasts (24-4oz breast halves)
  • YOGURT SAUCE
  • 1 1/2 cups low fat, plain yogurt
  • 5 1/4 teaspoons fresh lemon juice
  • 1 1/2 teaspoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1 1/4 cups fresh mint leaves, rough chopped
  • 2 1/2 Tablespoons minced shallot

Directions

  1. In a large bowl, whisk together marinade: yogurt, oil, lemon juice, salt, chili powder, cumin, coriander, black pepper and cinnamon. Add chicken breasts to the bowl and coat the chicken evenly with the marinade. Marinate for 1/2 hour.
  2. While chicken is marinating, prepare the grill for cooking. While grill is heating, whisk together sauce: yogurt, lemon juice, oil, salt, minced mint and shallots. Chill.
  3. Remove chicken from marinade and discard marinade. Spray grill with cooking spray and grill chicken on both sides until cooked through. Serve with 1 tablespoon yogurt mint sauce.
