Ingredients
- 1 1/3 cups fresh lime juice
- 6 Tablespoons extra virgin olive oil
- 2 1/2 Tablespoons ground cumin
- 2 teaspoons granulated sugar
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 Tablespoon minced garlic
- 1 Tablespoon grated/minced ginger root or more to taste SALAD:
- 1 quart couscous
- 2 Tablespoons olive oil, divided
- 10 cups water, divided into 8 cups and 2 cups
- 2 cups raisins, divided in half
- 2 teaspoons ground turmeric, divided in half
- 1 quart chopped tomato
- 1 quart chopped peeled cucumber
- 3 cup (12oz) crumbled feta cheese
- 1 cup thinly sliced scallions
- 1/2 cup finely chopped fresh mint
- 60 fluid ounces canned garbanzo beans, rinsed and drained (about 1/2 a #10 can) measure after draining
Directions
To prepare dressing, combine first 8 ingredients, whisking well to combine.
Divide couscous, between two 4 inch full hotel pans. Rub the couscous in each pan with 1T of olive oil. Divide the raisins and turmeric evenly between the two pans and stir to combine with couscous.
Bring 8 cups water to a boil and pour 4 cups of boiling water evenly over each pan of couscous.
Cover each pan tightly with plastic wrap and allow couscous to absorb water, about 10-15 minutes.
Remove plastic and rake the couscous with your hands or two forks to break up any lumps.
Transfer couscous to two cheesecloth lines, perforated 4 inch hotel pans. Steam couscous in steamer for 15-20 minutes. Meanwhile, bring remaining 2 cups water to a boil.
Remove from steamer and rake it again to break up any lumps. Scatter remaining 2 cups water evenly over the two pans of couscous, rake it well to combine and put back into steamer. Steam for 20 minutes. If all the water hasn’t been absorbed, let couscous sit in a warm place and it will gradually absorb all the water.
Place couscous mixture in a large bowl. Add tomato, cucumber, feta, green onions, mint and garbanzo beans. Drizzle with dressing; stir well to coat. Cover and chill at least 1 hour.
