Ingredients
- 1 gallon 1-inch diagonally cut asparagus
- 1 1/2 cups fat-free mayonnaise
- 1 1/2 cups plain nonfat yogurt
- 2 Tablespoons curry powder
- 2 Tablespoons fresh lemon juice
- 1 teaspoon kosher salt
- 2/4 teaspoon black pepper
- 3 quarts roasted, skinless, boneless chicken breasts (about 10 breasts) cut into thin strips
- 2 cups chopped red bell pepper
- 1 1/2 cups chopped fresh flat-leaf parsley
- 3/4 cup sliced almonds, toasted
Directions
Steam the asparagus 2 minutes or until crisp-tender. Chill
In a large bowl combine mayonnaise, yogurt, curry, lemon juice, salt and pepper, stirring well with a whisk. Add the asparagus, chicken, bell pepper, parsley and almonds; toss to coat. Serve chilled.
