Ingredients

  • BROWN GRAVY:
  • 1/2 cup low sodium beef base
  • 1 1/4 gallon water
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon onion powder
  • 2 Tablespoons tomato paste
  • 4 ounces flour – all purpose SWISS STEAK:
  • 6 1/2 pounds top round steak, 4oz Cuts – Raw
  • 6 1/2 ounces flour – all-purpose
  • 1 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon thyme, ground
  • 2 Tablespoons canola oil

Directions

Prepare the gravy: In a small stock pot, combine the low sodium beef base and the water. Hold 1 cup of the mixture aside – cold.

To the beef base, add the white pepper, onion powder and tomato paste. Bring to a boil.

Mix the flour with the 1 cup of reserved liquid. Add this flour slurry to the stock – whisking constantly to prevent lumps. Simmer the gravy for 15 minutes to cook out the floury taste. Hold gravy at a minimum temperature of 140 degrees.

Combine the flour, black pepper, garlic powder, onion powder and thyme. Dredge the steaks in the seasoned flour.

On a preheated flat top griddle: Sear the steaks with canola oil, cooking 3-4 minutes per side.

Shingle the steaks in a 2” hotel pan and cover with the gravy. Cover with foil and bake in a preheated 375 degrees for 20-30 minutes and the internal temperature has reached 145 degrees for a minimum of 15 seconds. Hold the steaks at a minimum temperature of 140 degrees for service.
