Tempeh Club Sandwich

Ingredients

  • HERBED MAYONNAISE
  • 3 cups low fat mayonnaise
  • 6 Tablespoons chopped fresh dill
  • 6 Tablespoons chopped fresh chives
  • 6 Tablespoons chopped Italian flat leaf parsley SANDWICH
  • 6 8 ounce packages soy tempeh
  • 3/4 cup canola oil
  • 1 1/2 teaspoons kosher salt, divided
  • 1 1/2 teaspoons black pepper, divided
  • 48 1-1/4 ounce slices whole grain bread toasted
  • 6 whole avocados, thinly sliced
  • 1 1/2 cups sundried tomatoes, rehydrated in hot water if necessary, julienned NOT PACKED IN OIL
  • 6 cups julienned romaine lettuce

Directions

Combine the ingredients for the herbed mayonnaise in a bowl and mix thoroughly. Set aside.

Slice each rectangle piece of tempeh in half lengthwise so that it is half its original thickness. Cut each piece in half again, making 2 smaller rectangles. There should be eight 2 ounce pieces of tempeh (4 from each original piece), approximately the size of a slice of bread.

Heat a large nonstick pan on medium-high heat. Add 2 Tablespoons of the oil and 4 pieces of the tempeh. Sauté until golden on the first side, flip the tempeh and continue to cook until golden on the second side. Remove the tempeh from the pan, season each piece with a pinch of salt and pepper, and reserve. Repeat with the remaining tempeh, changing and adding fresh oil if necessary.

To assemble the sandwiches, spread each half of the toasted bread with 1 tablespoon of the green mayonnaise. Prepare each sandwich by stacking in this order: tempeh, 1/4 of sliced avocado, Top 8 slices of bread with the tempeh, the avocado slices, 1 Tablespoon of sundried tomatoes, 1/4 cup romaine and a second piece of bread.

Slice the sandwich in half and serve immediately.
