Ingredients
- 1 1/2 cups water
- 3/4 cup dry white wine
- 1 Tablespoon minced fresh garlic
- 9 4-ounce skinless, boneless chicken breast halves (2-1/4 pounds)
- 4 1/2 cups low fat plain yogurt with active cultures
- 3/4 cup mayonnaise
- 1/2 cup fresh lemon juice
- 3 Tablespoons cider vinegar
- 2 Tablespoons dijon mustard
- 2 1/4 teaspoons kosher salt
- 1 1/2 teaspoons dried oregano
- 3/4 teaspoon black pepper
- 3 quarts cooked tubetti or ditalini (short tube pasta), about 4 cups uncooked
- 1 1/2 cups diced celery, blanched, shocked, drained
- 1 1/2 cups diced red bell pepper
- 1 1/2 cups diced green bell pepper
- 1 1/2 cups grated carrot
- 1 1/2 cups chopped fresh Italian parsley
Directions
Combine the first 4 ingredients in a saucepan; bring to a boil. Cover and simmer for 15 minutes or until the chicken is done. Remove the chicken pieces from the broth; cool and coarsely chop. Bring the broth to a boil over high heat; cook until reduced to 3/4 cup (about 5 minutes). Cool.
Spoon yogurt into cheesecloth and place into basket strainer over a container deep enough to catch any liquid that drains off the yogurt. Drain yogurt for 20 minutes.
- Scrape into a bowl using a rubber spatula. Combine the reduced broth, yogurt, mayonnaise, and next 6 ingredients (mayonnaise through black pepper) in a large bowl. Stir in the chicken, pasta, and the remaining ingredients. Cover and chill thoroughly.
